If a vehicle is driven with low oil pressure, what effect does this have on its engine?

It increases wear and tear on the engine.
Official explanation
Low oil pressure is usually related to low oil level or to a faulty oil pump. Low engine oil level should be topped up in accordance with the manufacturer's recommendations. Failure to do so may result in costly and extensive engine damage.
